It is usually drunk through a metal straw called a bombilla or bomba.

When the brewed “tea” is consumed, more warm water is added and the gourd passed around until all of the flavours have been drawn out.

There are many traditions for sharing it in a group with the guampa and bombilla. But it is now available in tea bags or loose leaf teas and ready-to-drink forms.

HOW BLACK TEA IS PROCESSED

The withering cycle begins when the tea is picked and brought to the factory.

The tea leaves are stacked in deeper piles, revealing them to less air for as long as 18 hours.

Once the leaves are significantly withered then they are rolled. The remaining moisture is gradually released during rolling, shaping, oxidation, firing, and drying until the tea is dry enough to package.

The rolling helps shape the leaf, forming its unique character and preserving the whole leaf.

Oxidation is important in developing the full potential flavor of black tea. The oxidation process removes a lot of moisture from the leaves and builds the character and flavor of the tea. Controlling humidity and temperature is crucial to the oxidation process.

While oxidation helps leaves to remove the moisture, there is still water in leaves that must be removed in the final drying stage.

Once the tea leaves are fully dried, the leaves are sorted before the tea is finally packaged.

MEET THE SMOKY BLACK TEA: LAPSANG SOUCHONG

When many tea drinkers think of tea, they think of black tea. Black tea is a favourite choice of many tea drinkers worldwide.

 

So if you are also one of the black tea lover, there is no doubt that you must have heard of many black tea types and blends. But have you heard of Smoky black tea?

 

Oh yes, Lapsang souchong! You got it right. The robust smoky black tea.

MEANING OF LAPSANG SOUCHONG

Typically thought to be the first black tea, Lapsang souchong is a unique and smoky black tea blend.

 

Instead of being left to wither, its leaves are smoke-dried over burning pine wood to give it a signature smoky flavor.

 

When a large-leaf black tea is smoked over the pinewood the result is this love-it tea.

 

There can be different variations of tea due to the strength and flavour of the black tea used to make it and the duration of time and intensity of smoking.

TALE OF LAPSANG SOUCHONG

As with many Chinese teas, there are various tales associated with the origin of lapsang souchong.

It is thought that the smoking process was discovered by accident when the presence of soldiers in the area prevented the workers from property finishing their harvest.

The fresh green teas were left to oxidized too long and turned brown. The workers quickly dried the tea over a pine tree fire to save some of the tea and pleased with the smoky flavor of the tea.

 

Another story tells us that a squad of soldiers passing through the village made their camp near the factory and slept on the soft piles of withering leaves.

In doing so, they ruined the tea crop. To make up for their lack of consideration, the soldiers dried the tea over their pine fire for the tea workers, and so inspired the new flavor.

HOW DOES THE LAPSANG SOUCHONG PROCESS?

Lapsang souchong is processed similar to black tea. The only difference is the intermediary step of smoking over pine woods to add an artificial smoke flavour.

 

The leaves are first withered over fires of pine or cypress wood. After pan-frying and rolling, they are presses into wooden barrels and covered with cloth to ferment until they give off a pleasant fragrance.

How does the Lapsang Souchong process?

The leaves are fired again and rolled into taut strips. They are placed in bamboo baskets and hung on wooden racks over smoking pine fires to dry and absorb the smoke flavor.

When finished they are thick, glossy black strips.

The original and authentic Lapsang Souchong is harvested in Wuyi mountain of Fujian province.

Excellent Lapsang Souchong is also manufactured in Taiwan, from the small amount of black tea produced there.

Tale about the origin of Genmaicha

There are many tales about how genmaicha green tea  was found and the origins of genmaicha.

The first one dates back to the 15th century when a servent accidentally lost few grains of rice hidden up in his sleeve into the cup of the Master, for whom he was pouring an expensive tea.

The second one is quite terrifying when the feudal lord cut off the servants head as he accidentally spills the rice into the feudal lord’s tea. However, the feudal lord tastes the tea and discovers that it actually taste quite good and named tea Genmaicha in honour of the servant, whose name was Genmai.

Yet another story tells us that this method of mixing rice into tea was introduced in the 1900s as a way of making tea available for everyone during hard times.

HOW TO BREW GENMAICHA

To brew a cup of genmaicha green tea, you will need

1) Genmaicha loose leaf green tea

2) Teapot and strainer

3) Filtered water

How to brew genmaicha
PREPARATION

Step 1 – Bring fresh filtered water to boil up to 170 to 180F

Step 2 – Pour boiling water into the teapot. Add genmaicha loose leaf green tea ( Use about 4-5 grams of tea per cup).

Step- 3 Steep for up to 2 minutes. Pour the tea into a cup.  You can re-steep it 2-3 times.

Normally thought of as a warm tea, but chamomile iced tea is surprisingly delicious.

Chamomile tea has long been valued for its soothing, relaxing, and reviving character.

A daisylike flower, chamomile is used to make a herbal tea rather than a true tea. (As we know, herbal teas are not real tea.)

In addition to being delicious, the fresh lemon adds a boost of vitamin C which is handy if you’ve got a cold or are feeling under the weather.  

In this iced recipe you can use honey or sugar as sweetener, but it is not necessary as chamomile tea has a slightly sweet taste on it’s own.

The trick is to make it strong enough, and this recipe does.

Making Chamomile Iced Tea

1. Prepare your loose leaf or tea bags.

2. In a small saucepan, bring water 1 cup of water to a slow boil. Add the tea bags(if you are using tea bags), or loose leaf tea. Cover, and remove from the heat. Let’s steep for 5 minutes.

3. Strain with a fine mesh strainer. Allow tea to cool slightly.

4. Transfer the tea into a glass container. Add the sugar or honey and remaining 1 cup cold water and stir or shake until the sugar is dissolved.

5. Let’s cool, then chill and serve over ice, add slices of fresh lemon as desired.
